As I type this, I am sitting in the shaded bar attached to Pirates Cove Restaurant. A wonderful meal, sunshine, friendly staff and a flight of cocktails that scream Summer! Life ain’t that bad!
General Manager Richard Whelan is our bartender today. He is kind, extremely helpful and knows his cocktails. He prepares for us the Pirates Punch, classic Piña Colada, and Golden Margarita, but what stands out is the Coconut Crush (his personal fave) made with Galway Bay Irish Egg Nog, Amaretto, Island Oasis Coconut Mix and finished off with a cinnamon sugar rim. It’s a little taste of Christmas in July.
Don’t be fooled by the eggnog. The mix of Amaretto and coconut creates a comfortable but cooling drink that is a perfect match for the waterfront landscape surrounding this Galesville hideaway. The Galway Bay Irish Egg Nog has become a local favorite, as it is a recipe created by Anne Arundel County restaurateurs Anthony Clarke and Michael Galway of Galway Bay, Brian Boru, Killarney House and Pirates Cove fame.
